WHO ARE WE ?
The adventure "The French Bootlegger" began in August 2017 in New York City when Anaïs, founder of TFB, decided to venture into the world of mixology. Trained in NYC, the birthplace of cocktails, she learned the basic techniques and the art of cocktail creation. Back to Paris, she worked in renowned cocktail bars like 153 in “Le Marais”, before heading to Australia a year and a half later, where she worked for six months at the cocktail bar "Lui Bar," part of the Michelin-starred restaurant “Vue De Monde”.
Back in France in 2020, The French Bootlegger was born!

She was joined in 2022 by Apollonia, who shares her passion for mixology and became her partner. Apollonia trained as a bartender in Paris before delving into advanced mixology techniques in cocktail creation. After her training, she worked at the highly acclaimed gastronomic restaurant of Cyril Lignac in Saint-Germain-des-Prés, then in prestigious hotels such as the 4-star “Victoria Palace”.

With her 10 years of experience in consulting, facilitation, and operational event management, she has an eye for every detail to offer you a turnkey experience.

Her innate sense of humor adds a lively touch to every event, creating a vibrant collaborative environment.

When she's not at TFB, Anaïs co-designs and facilitates collaborative work sessions.

Apollonia, on the other hand, embodies creativity!

Naturally enthusiastic, her love for cooking translates into innovative recipes, resulting in cocktails that are visually and tastefully surprising.​
Always eager to explore new horizons and with her background in art school, she combines her passion for travel with a sharp artistic eye.
With Apollonia, every project becomes a visual and sensory adventure that awakens the senses through new creative perspectives.
When she’s not at TFB, Apollonia is a creative director, photographer, and videographer for her own business
